Pale ales have always been a favorite of mine with how easy drinking they are while still having loads of character and plenty of those hops I love so much. So when I asked the folks at trillium which beer of theirs I should try I was pleased they pointed me towards this. Starting with the aroma, as usual, you get this lovely whiff of hops that just permeates the whole thing. Along with that though you get some very nice citrus coming through as well as an almost sweet malt smell. Then when you take a sip you get that hoppy bitterness but the dominant flavor here is that citrus from before. That’s not all though as you also get some great flavours of pineapple and a hint of pine, which I found very intriguing. As we come to the finish you’ll find that it lingers for a bit, though not super long, but what’s more interesting is that pine flavour seems to fade into this interesting earthy aftertaste. As for food pairings, I personally had this with delicious clam sandwich and it worked pretty well. As for other pairings, I can see this going with nearly everything from a good burger to even some spicy Thai noodles. This is a pretty tasty and versitalle beer that I’d certainly recommend if you can get your hands on some.
